Dutch Oven Goulash

Memorial Day weekend is here which means it is officially cook-out season. Why not mix-up your cook-out with a dutch oven meal? We love cooking meals in the dutch oven because the recipes are easy and the food is always delicious. Just like grilling, dutch ovens can provide a great social atmosphere where people gather outside to enjoy their company and food. I have a lot of found memories of Dutch ovens meals with friends and family during canoe and car camping trips. The other weekend we made a ground beef goulash in our dutch oven and our friends loved it. We found the recipe in our Dutch Oven & Cast Iron Cooking book. We’ve included the ingredients below, but really you can put whatever you want into a goulash as long as it includes beef, a tomato base, noodles, and spices.

Ingredients:

1 yellow onion (chopped)

1 green bell pepper (chopped)

2 T olive oil

1 lb lean ground beef

1 cup sliced mushrooms

1 clove garlic (minced)

1 can corn

2 cans tomato soup

¼ t paprika

½ t cayenne pepper

2 t salt

1 t pepper

1 box pasta shells

3 cups shredded cheese

As with any dutch oven meal, the first step is to light the coals and wait 15 minutes or so until they are hot. A general rule of thumb is that each coal briquette increases (or decreases) the temperature of the oven by roughly 10 degrees. For this recipe we used around 30 coals. Once the coals are hot, spray the inside of the dutch oven with oil and then warm the oven by putting 10 coals below it and 20 coals on the lid. When the dutch oven was hot, we added the ground beef to brown it. Next we dumped in the vegetables and let them cook until the onions were translucent. The soup, 2 and ½ cups of water, and the spices were added next. The recipe says to bring the mixture to a boil and then add the noodles, but it never boiled for us. We waited about 10 minutes and then got tired of waiting so we add the noodles. Finally, let the goulash cook until the noodles are done and top with cheese. Bon appetit!
