Mexican Chicken & Rice

This recipe passes all the tests of a great backpacking meal: it is delicious, filling, cheap, and easy. Our Mexican chicken and rice recipe includes three simple ingredients of fiesta flavored canned chicken, salsa, and Mexican flavored instant rice. Always look for easy to open cans or pouches when buying the ingredients. We bring our MSR Pocket Rocket stove to cook this meal because the stove is light-weight and takes up minimal space, and the recipe requires more than heating up water.

To cook the meal, simply stir all of the ingredients into a pot and cook over medium heat on the camp stove. Once the rice is fully cooked, usually after five minutes, remove the pot from the stove and enjoy. A small can of chicken and one pouch of instant rice is a perfect meal for one person. For two servings we buy a larger can of chicken or you can also buy more rice. If you want to dress-up the meal, then add a can of beans or pico de gallo. Bon appetit!

Ingredients:

  • 1 pouch of Uncle Ben’s Ready Rice – Spanish Style
  • 1 can of mexican flavor chicken
  • 8 oz of salsa

Gear:

  • MSR Pocket Rocket stove & fuel
  • Lighter
  • Pot
  • Bowl
  • Can opener (optional)

Instructions: Combine all ingredients the pot, heat, and enjoy! It is usually ready in 5 minutes. Tip: use the water from the chicken can if the rice is dry.
